Smoor Ginjal
kidneys in coconut milk sauce

200 gr kidneys
400 ml water
4 tbsp vinegar
3 tbsp oil
5 shallots
3 tbsp sweet dark soy sauce (kecap manis)
200 ml thin coconut milk (santen cair)
1 lime (juice)
2 tbsp selery leaves, chopped

3 cloves garlic
2 red lomboks (large chillies)
2 cm ginger
3 cloves
1 tsp palmsugar

Cara membuat:
Mix the vinegar with the water and add the kidneys and let it rest for 45 minutes. Drain it and slice the kidneys into cubes. Cut the shallots into thin slices.
Pound the ingredients for the bumbu into a paste. Heat in a wok the oil and fry the bumbu and the shallots for 3 minutes. Then add the kidneys, the kecap and the coconut milk and let it simmer until its done. Then add the lime juice and let it simmer for 3 more minutes. Mix in the selery and serve.
