Daging gepuk goreng
stewed and fried spiced beef

500g beef
1000 ml water
2 stalks lemongrass
3 salam leaves
2 jeruk purut
1 cm galangal
750 ml santen cair
1 tbsp asemwater
9 shallots
4 cloves garlic
2 tsp ketumbar
4 tablespoons palm sugar
2 tsp salt
Cara membuat:
Heat in a pan the water and cook the meat 3/4 done. Scoop it from the pan and cut into slices and flatten it. Drain the broth but leave about 500 ml. Pound or grind the ingredients for the bumbu fine into a paste. Add this together with the lemongrass, the salam, the jeruk purut, the laos, the santen and the meat to the broth and cook until the meat is nearly done. Add the asemwater and cook the meat until cooked and let cool off.
Heat oil in a pan and fry the meat slowly until golden brown.
