Daging Gepuk Sambal Kemangi
fried beef slices with sambal

750 gr beef
4 salam leaf
2000 ml of water

3 shallots
4 cloves of garlic
2 tsp ketumbar, roasted
1 tsp pepper, roasted
100 gr palm sugar
2 tsp asam jawa
2 tsp salt

Bahan Sambal Kemangi:
7 shallots
5 cloves of garlic
5 red cabai keriting (curly cayenne pepper)
3 red lomboks, seeded
1 tsp salt
1 tsp palm sugar
1 tsp terasi / trasi bakar
100 g kemangi
1 lime, juice

Cara membuat:
Pound or grind the ingredients for the bumbu into a paste. Heat the water in a pan together with the meat, the bumbu and the salam and cook the meat until tender.
Remove the meat from the pan and cut into 1 cm thick slices. Then crush/flatten the slices. Heat enough oil in a pan and then fry the slices until brown.
Finely chop the shallots, the garlic and the keriting for the sambal and cut the lomboks into thin rings. Heat 1 tbsp of oil in a pan and fry the shallots, garlic, keriting, lomboks, salt, palm sugar and terasi for 5 minutes. Then mix in the kemangi and lime juice and mix it with the meat slices.
