Sate Maranggi Purwakarta
satay beef with cucumber sauce

750 gr beef
5 tbsp kecap manis
1 tbsp vinegar
1 tbsp oil
sate skewers
13 shallots
5 cloves garlic
4 tablespoons ketumbar
2 tbsp palm sugar
1 tsp salt
Bahan sauce:
Sauce ingredients:
200 ml water
3 shallots
3 red rawits
3 red chilies
1 cucumber
5cm kencur
1cm jahe
2 tbsp palm sugar
Cara membuat:
Cut the meat into cubes. Pound or grind the ingredients for the bumbu fine into a paste. Mix the paste with the kecap, the vinegar and the oil and add the meat. Let this marinate for at least 1 hour. Thread the meat on the skewers and grill then golden brown and cooked over a charcoal fire. Regularly covering the meat with the marinade.
For the sauce:
Deseed the cucumber and cut it with the shallots into thin slices. Cut the peppers into thin strips. Pound or grind the jahe and kencur fine. Heat in a pan the water and sauté the shallots, peppers with the jahe and kencur. Add the cucumber and sugar and let cool.
