warm tuna salad from Manado

350g smoked tuna
2 pandan leaf
1 tomato
1 tsp salt
1 tsp palm sugar
200 ml water
9 jeruk purut
2 bunches kemangi (lemon basil)
1/2 tsp lemon juice
1 tbsp oil
7 red chilies
5 red rawits
6 shallots
Cara membuat:
Pound or grind the ingredients for the bumbu fine into a paste. Cut the pandan into 3 cm long pieces. Slice the tomato finely and shred the tuna.
Heat in a pan the oil and fry the paste for 5 minutes. Add the pandan and tomato and fry it gently until soft. Add the tuna and mix well. Then add the salt and the palm sugar followed by the water. Mix well and let it simmer slowly until the sauce thickens. Then add the jeruk purut, the kemangi and lemon juice and fry until the liquid has evaporated.
