Kikil Celeng Mekuah

ingredients:
1200 pork ribs
8 shallots
4 cloves garlic
3 cm ginger
3 cm laos (galangal)
10 kemiri (candle nuts)
1 theel ketumbar (coriander seeds) crushed
3 cm kencur (bitterroot) crushed
1 tsp trassi (shrimp paste)
1 tsp peppercorns, crushed
2 salam leaves
500 ml chicken stock (see recipe)
2 tbsp oil
3000 ml water

11 kemangi leaves
Cara membuat:

Cut the ribs into pieces. Heat in a pan the water and add the ribs and cook it for 45 minutes then drain. Cut the shallots, the garlic, the laos, the ginger and the kemiri fine. Heat in a wok the oil and fry the shallots, the garlic, the ginger, the laos, the kemiri, the ketumbar, the kencur, the trassi, the peppercorns, the salam and the salt for 3 minutes. Add the stock and the ribs and let it simmer for 10-15 minutes. Garnis it with strips of lombo, the bawang goreng and the kemangi leaves.
