duck in a green curry


1500 gr duck
2 tbsp lime juice
1000 ml water
5 jerut purut / kaffir lime leaves
1/2 kunyit leaf (curcuma)
2 sereh (lemongrass) bruised
4 tbsp oil

2 tsp black pepper
8 kemiri nuts (candle nuts)
4 shallots
6 cm laos (galangal)
2 cm jahe (ginger)
2 cm kunyit (curcuma)

Cara membuat:
Cut the meat into pieces and sprinkle it with the lime juice. Roast the kemiri dry in a skillet. Pound or grind the ingredients for the bumbu into a paste. Heat in a wok the oil and fry the paste for 4 minutes. Add the water and after it boils add the meat, the jerut purut, the kunyit leaf and the sereh. Let it simmer slowly for 75 minutes until the meat is cooked and the sauce has thickened.
