Ayam Goreng Sambal Penyet Kemangi
fried chicken with sambal

1 chicken
2 salam leaf
3 jeruk purut leaves
2 serai / sereh / lemongrass
1 tsp palm sugar
1 tsp salt
2 tbsp asam water
500 ml of water

7 shallots
5 cloves of garlic
4 kemiri/candlenuts, roasted
2 cm kunyit, roasted
2 cm lengkuas / laos
1 tsp ketumbar
1/2 tsp jinten

Bahan sambal:
ingredients of sambal:
7 red cabai keriting (curly cayenne pepper)
8 red rawits
1 tsp terasi / trasi
1/2 tsp salt
1 tsp palm sugar
2 sprigs of kemangi

Cara membuat:
Cut the chicken into 8 pieces. Pound or grind the ingredients for the bumbu into a paste. Pound or grind the ingredients for the sambal into a paste and then mix in the kemangi leaves.
Heat in a pan the water together with the bumbu, the salam, the laos, the jeruk purut, the serai, the salt, the palmsugar, the asam water and mix well. Then add the chicken and cook until the liquid has evaporated. Then remove the chicken from the pan.
Heat oil in a pan and fry the chicken until brown and done. Roll the hot chicken through the sambal and serve.
