Ayam Goreng Sauce Tauco
fried chicken in a spicy soybean sauce

600 gr chicken thights
5 cloves of garlic
1 tbsp lime juice
1 tsp salt
100 gr of flour
1/2 tbsp tapioca starch / maizena
1/2 tsp salt
1/4 tsp pepper
1 sereh / lemongrass, white portion
2 salam leaves
4 tbsp tauco
1 tsp palm sugar
6 tbsp water

4 shallots
5 cloves of garlic
9 red rawits
9 dried red peppers
2 tsp trasi/shrimp paste

Cara Membuat:
Cut the meat into small strips and chop the garlic roughly. Mix the meat with the garlic, salt and lime juice and let it rest for 15 minutes. Mix the flour with the tapioca / maizena and salt and mix in the chicken and coat well. Heat in a pan sufficient oil and fry the chicken golden brown and set aside.
Deseed the rawits and peppers if needed for less heat. Pound or grind the ingredients for the bumbu into a paste. Cut the sereh very fine. Heat in a pan 2 tablespoons of oil and fry the bumbu with sereh and salam for 3 minutes. Then add the tauco and palm sugar and mix well. Then add the water and bring to the boil. When the sauce thickens, add the chicken and mix well. Serve.
