Sate Ayam Bumbu Bali
spicy roasted chicken with crispy skin

500g chicken leg
1 tsp lemon juice
2 tsp salt
2 tablespoons oil
9 red chilies
8 shallots
5 cloves garlic
1 lemongrass
1cm jahe
2cm kunyit
1 tsp ketumbar
1 teaspoon shrimp paste
1/2 tsp jinten
Cara membuat:
Remove the skin of the leg carefully and cut it into pieces. Cut the meat off the bone and cut it into pieces. Mix the meat, the skin with the lemon juice and salt and let it rest for 1 hour. Pound or grind the ingredients for the bumbu fine into a paste. Heat in a pan the oil and fry the bumbu for 3 minutes. Add the meat and the skin and let it marinate for at least 1 hour.
Thread the meat and the skin on the skewers and roast it over a charcoal fires until golden brown. Brush the meat frequently with the marinade.
