Sichuan Wontons Chili Oil - 红油抄手

Ingredients:
40 square wonton wrappers
200 gr minced pork
6 cloves of garlic
2 spring onions
7 tbsp water
1 egg
1/4 tsp salt
1/4 tsp pepper
water
Sauce ingredients per serving:
2 cloves of garlic
1 tbsp light soy sauce
1 tbsp black rice vinegar
1/2 tsp Sichuan pepper
1/2 tsp palm sugar
2 tbsp chili oil
Preparation:
Finely chop the garlic. Finely chop the spring onion and add the white part to the garlic. Then add the water and let it soak for 10 minutes.
Mix the minced meat with the egg, salt and pepper to a homogeneous mass. Remove the garlic and spring onion from the water and add the water to the meat mixture, while stirring, and stir until the moisture is absorbed.
Moisten each time the edges of a wonton wrapper and place some of the minced meat mixture (1 heaped tsp) on top and fold the wonton wrapper closed like a triangle.
Heat the water in a pan and bring to a boil. Then add the wontons and cook until tender. When they start to float, cook for 1 more minute and then scoop them out of the pan.
Sauce:
Finely chop the garlic. Mix all the ingredients for the sauce together well.
Mix the wontons with the sauce and spring onion and serve.
