fried fish with sauce
Ingredients:
500 gr mackerel
oil
Ingredients sauce:
2 shallots
4 cloves of garlic
3 red rawits
2 tbsp fish sauce
2 tbsp palm sugar
2 tbsp lime juice
2 tbsp fish stock (see recipe)
Preparation:
Clean the fish. Heat enough oil in a pan, and on high heat, fry the fish until the fish is done and the skin is crispy. Then remove the fish from the pan.
Finely chop the shallots and garlic. Finely chop the rawits. Drain the oil and reheat the pan. Fry the shallots and garlic for 2 minutes and scoop half out of the pan.
Then add the rawits, the fish sauce, the palm sugar, the lime juice and the stock and fry while stirring until the sauce thickens. Then add the other half of the shallots/garlic and mix well.
Spoon the sauce over the fish and serve.
