Gai Pad Med Mamuang Himaphan
thin sliced fried chicken with cashew nuts

250 gr chicken
1 tbsp tapioca flour
1 tsp rice wine
1 tbsp Golden Mountain sauce

Slice the meat thinly and mix it with the remaining ingredients and let it marinate for 15 minutes.

Ingredients 2:
1 onion
1 bell pepper
15 dried rawits
125 gr water chestnuts
3 sprin onions
150 ml oil

Preperation/method 2:
Slice the onion and the bell pepper coarse and the spring onions into 3 cm long pieces. Heat in a wok the oil and fry the meat golden brown. Remove the meat and let it drain on kitchen paper. Pour out the oil but leave 3 tbsp behind. Add the rawits and fry them crisp. Add the onion and the bell pepper and fry these soft. Remove them and set aside.

Ingredients 3:
2 tsp tapioca flour
2 tbsp rice vinegar
2 tsp oyster sauce
1 tbsp sriracha sauce (spicy chili sauce)
2 tbsp ketchup
2 tbsp palmsugar
1 tbsp kecap asin
2 tsp sesame oil
1/2 tsp pepper
1 tbsp chili oil ( the remaining oil from preperation/method 2)
5 tbsp oil
125 gr cashew nuts

Preperation/method 3:
Mix all ingredients together. Heat a wok and add the mixture and fry it until the sauce has thickened. Add the chicken, the rawits, the onion and the bell pepper and stir. Then add the cashew nuts, the water chestnuts and the spring onions and fry it for 1 minute and serve.
