spicy meat salad
Ingredients:
450 gr sirlon steak
4 tbsp nam pla (fishsauce)
2 limes (juice)
6 shallots
2 tbsp ketan flour (sticky rice)
1 spring onion
1 cl laos / galangal
2 red large chilies
5 sprigs coriander
Garnish:
15 mint leaves
8 small red chilies
Preperation/method:
Roast the ketan flour dry in a skillet. Pound or grind the laos and the chilies fine into a paste. Slice the shallots and the spring onion fine. Chop the coriander and the steak. Heat a wok and fry the steak brown and remove it. Mix in the ketan, the spring onion, the coriander, the laos, the chilies, the nam pla, the shallots and the lime juice. Cut the small chilies julienne and garnish together with the mint the dish. Serve the dish with blanched green vegetables.
