Gulai Telur Kemangi
eggs poached in spiced coconut milk

6 eggs
600 ml coconut milk (from 1/2 coconut)
6 jeruk purut leaves
2 serai/sereh/lemon grass
2 cm lengkuas/laos
1/2 kunyit leaf
10 red rawits
25 g kemangi

7 shallots
3 cloves of garlic
1 cm kunyit
1 tsp pepper
1 tsp salt
1/2 tbsp palm sugar

Cara membuat:
Pound or grind the ingredients for the bumbu into a paste. Cut the rawits into slanting rings.
Heat the oil in a pan and fry the bumbu for 5 minutes. then add the kunyit leaf, the jeruk purut, the serai, the lengkuas and the rawits and fry while stirring for a few minutes.
Then add the coconut milk and bring it to the boil while stirring. Carefully crack an egg over the pan and add it. When the egg solidifies, add a new egg each time. Then add the kemangi and cook until done. Serve.
