Telur Ceplok Kuning Pedas
omelette in spicy yellow sauce

8 eggs
2 salam leaves
3 jeruk purut / kaffir lime
2 stalks lemongrass
10 red rawits / birds-eye chilies
3 red chilies
3 green chilies
300 ml of water
1/2 tsp salt
1/4 teaspoon pepper
1/2 tsp palm sugar
1 spring onion
6 shallots
4 cloves garlic
7 candle nuts
2 cm laos
2 cm jahe
3 cm kunyit
Cara membuat:
Beat the eggs and fry them into an omelette and set aside. Cut the chilies into 1 cm long pieces. Cut the spring onions into pieces. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan 2 tbsp oil and fry the paste, the lemongrass, the salam, the jeruk purut, the chilies and the rawits for 5 minutes. Add the water and bring to a boil. Then add the salt, the pepper and the palm sugar and stir until the sauce thickens. Then add the omelette and cook slowly for 2 minutes. Then spoon through the spring onion and serve.
