Ayam Kelak Bage
chicken soup from Mataran

1 chicken
500 ml water
500 chicken stock (see recipe)
30 gr assam leaves (tamarinde)
1 tbsp oil

5 red shallots
4 cloves garlic
6 kemiri (candlenuts)
1 tsp ketumbar
1 tsp black peppercorns
1 ts salt

Cara mambuat:
Pound or grind the ingredients for the bumbu fine into a paste. Cut the chicken in pieces. Heat in a pan the oil and fry the bumbu for 2 minutes. Add the chicken and fry it brown. Add the water and the stock and let it cook slowly until the meat is done. add the assam leaves and let it simmer for a few minutes.
