beef soup with ribs
Bahan-bahan:
ingredients:
1000 gr beef + ribs
100 gr ambarella leaves (kedondong)
3 lemon grass
2500 ml water
13 shallots
5 cloves garlic
3 tomatoes
5 sprigs celery
1 tsp pepper
1 tsp palmsugar
salt to taste oil
Cara membuat:
preperation/method:
Cut the kedondong fine. Cut the ribs in pieces and the meat in chunks. Heat in an pan the water and add the meat, the ribs, the lemon grass and the kedondong and let it simmer for 1 hour. Slice the shallots and the garlic in thin slices and the tomatoes in parts. Chop the celery fine.
Heat in a wok the oil and deep fry half the shallots until golden brown and crispy. Remove the shallots and drain. Pout the oil out but leave 3 tbsp oil. Fry in the oil the remaining shallots and the garlic for 3 minutes and add it together with the pepper, the palmsugar and the salt to the soup. Let it simmer for 15 minutes and then add the tomatoes and the celery and sprinkle the fried shallots on top. Serve
