Asem Terong
eggplant in a mild sour sauce

500 gr eggplant
3 red rawits
3 shallots
3 cloves garlic
2 tsp asem
1 tomato
2 tsp palsugar
1/2 tsp salt
500 ml water


1 spring onion, sliced
2 tbsp chopped coriander leaves
2 tbsp bawang goreng

Cara membuat:
Cut the rawits, the shallots, the garlic and the eggplan fine. Slice the tomato into parts. Heat in a wok the water and add the rawits, the shallots and the garlic and let it simmet slowly for 4 minutes. Add the eggplants and the asem and let it simmer for 2 minutes. Then add the tomato and the palmsugar and let it simmer for 2 minutes more. Then add the salt and garnish it with the bawagn goreng, the coriander and thre spring onion and serve.
