Tumis Kangkung Ampela
Stir fry of kangkung with chicken

2 bunches of kangkung
5 chicken stomachs
2 red lomboks
1 tsp salt
1/2 tsp of palm sugar
200 ml coconut milk
1 tsp of asamwater (tamarind)
2 tbsp of oil
3 red lomboks
4 shallots
4 cloves of garlic
1 cm laos/galangal
1/2 tsp trassi/shrimp paste
Cara Membuat:
Heat the water in a pan and cook the stomachs. Then cut them into pieces. Rub or grind the ingredients for the bumbu fine into a paste. Cut the lomboks into slanted rings.
Heat in a pan the oil and fry the bumbu for 3 minutes, then add the lomboks and fry for another 2 minutes. Then add the kangkung and fry it slowl until soft. Then add the chicken, the salt and the palm sugar followed by the coconut milk and cook it slowly until done. Spoon in the asamwater and serve.
