pumpkin stewed in coconut milk
250 gr labu kuning / parang / yellow pumpkin / bottle calabash
250 gr bayam / wild spinach
100 gr of dried salted fish
1500 ml coconut milk (from 1 coconut)
2 salam leaf
1 tsp palmsugar
1/2 tsp salt
4 cloves of garlic
4 red lomboks
3 kemiri nuts
3 cm lengkuas / galangal
Roast the salted fish and then cut it into pieces. Cut the labu into cubes. Cut the corn loose from the cob. Pound or grind the ingredients for the bumbu fine into a paste.
Heat the coconut milk together with the bumbu and salam in a pan and bring to the boil. Reduce heat and add the fish and bring it back to a boil over low heat.
Then add the labu, bayam, corn, salt and palm sugar and mix well. Then cook it until done. Serve
