Sayur Lebui
spiced pumpkin with black beans

100 g labu kuning (pumpkin)
200g lebui (black beans)
2000 ml of water
6 red rawits
5 cloves garlic
5 shallots
3 red chilies (large)
1 green lombok
2 tomatoes
2 cm laos
2 salam leaves
3 belimbin wuluh (star fruit)
3 tsp salt
1 tsp palm sugar
200ml coconut milk
2 sprigs kemangi
2 tablespoons oil
Cara membuat:
Heat in a pan the water and cook the beans. Cut the pumpkin into pieces, the garlic and the shallots into slices. Cut the chilies in slanting rings and the tomatoes into pieces. Grate the Laos. Cut the belimbing into slices.
Heat in a pan the oil and fry the shallots, garlic, chilies, tomatoes, galangal and the salam for 4 minutes and add to the beans. Add the pumpkin, rawits and belimbing to the beans and bring to a boil. Add the coconut milk, salt and the palm sugar and cook gently until tender. Stir in the kemangi leaves and serve.
