eggplant stewed in spicy coconut milk
Bahan-Bahan:

4 aubegines
15 tahu kulit / tahu sheets
3 jeruk purut leaves
2 salam leaf
1 serai / sereh / lemongrass, white part
2 cm lengkuas / galangal / laos
1/2 tsp of salt
1 tsp palm sugar
600 ml coconut milk (from 1/2 coconut)
3 tbsp oil

bumbu:
3 red lomboks
2 red rawits
4 kemiri nuts, roasted
6 shallots
4 cloves of garlic
1/2 tsp ketumbar

Cut the aubergines into pieces. Pound or grind the ingredients for the bumbu into a paste.
In a pan, heat the oil and fry the bumbu together with the jeruk purut, the salam, the serai and the galangal for 5 minutes. Then add the aubergines and the tahu and mix well.
Then add the coconut milk, salt and palm sugar and cook until done.
