Kangkung Tumis Petis
fried kangkung with shrimp paste

3 bunches kangkung
2 tbsp petis udang / shrimp paste
4 cloves garlic
4 shallots
2 jeruk purut
1 cm laos/galangal
2 red chilies
1 tsp salt
1/2 tsp paper
1/2 tsp palm sugar
1 tsp kecap manis
100 ml of water
1/2 tsp lime juice
2 tbsp oil
Cara membuat:
Clean the kangkung. Deseed the chilies and chop coarsely. Chop the garlic and the shallots coarsely. Pound or grind the laos fine.
Heat in a pan the oil and fry the shallots, the garlic and the laos and cook for 3 minutes. Add the chilies and fry for 1 minute. Add the petis and stir well. Add the kankung and fry gently until soft. Add the pepper, salt, palmsugar, the kecap and water and mix well. When the kangkung is nearly done add the lime juice and mix and serve.
