Papaya with meat

250 gr papaya
150 gr beef
2 salam leaves
2 jeruk purut leaf, deboned
1 lemongrass
1 tbsp salt
1 tsp palm sugar
1 tsp asem dissolved in 1 tbsp water
350 ml coconut milk
2 tbsp oil
1000 ml water
4 shallots
3 cloves of garlic
4 kemiri nuts (candlenuts), toasted
1/4 tsp ketumbar
2 pieces kluwak
1/2 tsp peppercorns
1/4 tsp jinten
2 cm kunyit, toasted
1 cm kencur
Cara membuat:
Cut the meat into pieces and the papaya into matchsticks. Pound or grind the ingredients for the bumbu fine into a paste.
Heat the water in a pan and add the meat and cook until tender. Remove the meat and leave behind 750 ml of broth.
Heat in a wok / wadjan the oil and fry the bumbu with the salam, the jeruk purut and the lemon grass for 4 minutes. Then add the meat and papaya and stir it well. Then add the broth and the salt and palm sugar and bring to a boil. Then add the santen and bring it close to the boil. Mix the asamwater and serve.
