Sayur Asam Iga
beef stew with mixed vegetables

500 gr thick beef spareribs
2000 ml of water
2 salam leaf
3 cm lengkuas / galangal
5 asam muda / tamarind
100 gr melinjo
1 sweetcorn
1/2 labu siam / chayote
3 snake/long beans
1 tsp palmsugar

7 shallots
5 red lomboks
3 cm kunyit
1 tsp terasi
1 tsp salt

Cara membuat:
Heat 350 ml water with the meat in a pressure cooker and cook the meat over high pressure until done and set aside. Cut the asam, the melinjo and the long beans into pieces. Cut the corn kernels off the cob. Cut the chayote julienne. Pound or grind the ingredients for the bumbu fine into a paste.
In a pan, heat the remaining water to the boil along with the bumbu, salam, galangal, asam, melinjo, chayote and long beans. Then mix in the palm sugar.
Cut the meat into pieces. Then add the meat and cook until the sauce has thickened and the vegetables are tender. Serve.
