Sambal Kencur
spicy bitterroot relish
Bahan-bahan:
ingredients:
7 red lomboks
7 red rawits
5 kemiri (candlenuts)
3 tbsp oil
4 shallots
7 cm kencur (bitterroot)
2 tsp asem (tamarind) + 3 tbsp water
1 tsp salt
2 tsp palmsugar (gula jawa)
1 tsp trasi bakar (roasted shrimp paste)
4 jeruk purut / kaffir lime leaves

Roast the kemir dry in a skillet. Pound or grind the lomboks, the rawits and the kemiri fine into a paste. Cut the shallots very thinly and grate the kencur. Mix the asem with the water and remove the spine from the jeruk purut leaves.
Heat in a wok the oil and fry the paste, the shallots and the kencur for 3 minutes. Then add the asemwater, the salt, the palmsugar, the trasi and the jeruk purut leaves and let it simmer slowly until the mixture has thickened.
