sweet sharp sambal

3 tbsp oil
1/2 tsp trassi (shrimp paste)
3 shallots
11 red lomboks (large chilies)
3 cloves garlic
2 tsp gula jawa (palmsugar)
4 roasted candlenuts
salt to taste

preperation/method:
slice the shallots, the lomboks and the garlic thinly. Pound or grind the candlenuts fine. Heat in a wok the oil and fry the shallots, the garlic, the candlenuts and the trassi for 3 minutes. Add the lomboks, the palmsugar and the salt and fry it slowly for 5 minutes.
