Bagar Kambing
lamb in a spicy sauce

500 gr lamb
1/2 tsp lime juice
2 serai / sereh / lemongrass
10 jeruk purut leaves
2 cloves
3 cm of cinnamon
1/2 tsp asam water
1000 ml water
1 tsp of salt
1 tsp palm sugar
75 gr coconut, grated
3 tbsp oil

2 cm kunyit, roasted
7 shallots
5 cloves of garlic
6 red lomboks
5 red rawits
1/2 tsp nutmeg
1/8 tsp fenugreek
1 tsp ketumbar
2 cm jahe
2 cm lengkuas / galangal / laos

Cara membuat:
Cut the meat into 3x3cm slices. Rub it with the lime juice and let it soak for 10 minutes. Roast the coconut in a pan and mash it. Pound or grind the ingredients for the bumbu into a paste.
In a pan, heat the oil and fry the bumbu together with the serai, the jeruk purut, the cloves and the cinnamon for 5 minutes. Then add the meat and fry until it changes color.
Then add the water, salt, palm sugar and asam water and cook until done. Then mix in the grated coconut and serve.
