Gulai Pagar Puri
stew of lamb and eggplant

Bahan-bahan:
ingredients:
750 gr lamb
150 gr terong medan (thin green eggplant)
2 cardamom
4 cm cinnamon
1/2 tbsp salt
1/2 tsp palm sugar
1/2 tsp pepper
1 tbsp asamwater
1000 ml coconut milk
2 tbsp oil

Haluskan:
bumbu:
2 cm kunyit
5 shallots
5 cloves of garlic
5 red lomboks
1/4 tsp jinten
2 cm jahe

Cara Membuat:
preparation:
Cut the meat into pieces. Pound or grind the ingredients for the bumbu into a paste.
Heat in a pan the oil and fry the bumbu with the cardamom and cinnamon for 4 minutes. Add the meat and fry it until it changes colour. Then add the coconut milk, the salt, the palm sugar, the pepper and the asam water and cook the meat until tender. Then add the eggplant and cook until done.
