Bahan-bahan:
ingredients:
700 gr spareribs (goat)
3 salam leaves
2 cm jahe
1 lemongrass
1000 ml water
2 kunyit
5 jeruk purut/kaffir lime
2 cardamom pods
4 cloves
1/4 teaspoon jinten
1500ml santen cair (thin)
500 ml santen asli (thick)
Haluskan:
bumbu:
7 shallots
5 cloves garlic
3 red chilies
7 red rawits
2 tsp ketumbar
2 cm laos
3 cm kunyit
2 cm jahe
4 candlenuts
2 tsp salt
1 tsp palm sugar
Taburan:
garnish:
4 tbsp Bawang Goreng/fried onions
Cara membuat:
preparation:
Heat in a pan the water and cook the ribs with the salam until tender and then drain. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the santen cair with the bumbu, the lemon grass, the kunyit leaves, jeruk purut, the cardamom, cloves and jinten and bring to a boil. Add the ribs and add slowly the santen asli and cook until the sauce has thickened.
Sprinkle the bawang goreng on top and serve.
