Ikan Pepes Bumbu Merah
spicy fish steamed and roasted in banana leaf
Bahan-bahan:
1000 gr carp
1 tomato
1 sereh (lemongrass)
1 spring onion
5 salam leaves
3 sprig kemangi
1/2 tsp salt
2 tbsp oil
banana leaf
biteng (tooth picks)
Haluskan:
bumbu:
3 cloves garlic
5 shallots
3 cm jahe (ginger)
2 cm kunyit (turmeric)
3 red lomboks
5 kemiri (candlenuts)
1 tsp asem (tamarind)
1 tsp palmsugar
1 tbsp water
Cara membuat:
preparation/method:
Chop the tomato and the spring onion fine. Slash the fish on both sides and rub it in with the salt. Pound or grind the ingredients for the bumbu fine into a paste and mix it with the oil. Rub the fish in with the bumbu. Put the fish on a banana leaf and add the tomato, the spring onion, the sereh, the salam and the kemangi and fold it like a package. Close it with the biting. Steam the fish for 30 minutes and let it cool down. Oast the fish slowly for 15 minutens above a charcoalfire and serve.
