Sambal Be Tongkol
tuna salad with a shallot/sereh dressing

4 tuna steak (total 600 gr)
4 tbsp base be pasih (see recipe)
1/2 tsp salt
1/2 tsp black pepper
1 tbsp lime juice
125 gr sambal matah (see recipe)
1 jerut purut / kaffir lime leave
2 tbsp oil

2 tbsp bawang goreng (fried shallots)
1 red lombok

Cara membuat:
Marinate the tuna with the base and the lime juice. Heat in a frying pan the oil and fry the tuna until done and let it cool. Slice the jerut purut very fine. Break the tuna into very small pieces and mix it with the sambal, the jerut purut, the salt and the pepper. Slice the lombok in very thin strips and fry these golden brown. Sprinkle the bawang goreng and the fried lombok over the salad and serve.
