Tenggiri Lempah Kuning
stewed mackerel in spicy sauce

1 mackerel (600 gr)
1 tbsp lime juice
1/4 pineapple
2 tomatoes
2 serai/sereh/lemon grass
4 cm lengkuas/laos/galangal
1 tbsp asam water
1 tsp salt
1 tsp palm sugar
1200ml water

4 shallots
4 cloves of garlic
5 red lomboks
4 red rawits
7 cm kunyit, toasted
1 tsp terasi/trasi

Cara membuat:
Clean the fish and rub it with the lime juice. Leave it on for 10 minutes and then rinse it off. Cut the fish into slices. Pound or grind the ingredients for the bumbu into a paste. Cut the pineapple and tomatoes into cubes.
Heat in a pan the water together with the bumbu, the serai and the lengkuas and bring to the boil. Then add the fish, palm sugar, salt and asam water and cook until the fish changes color.
Then add the pineapple and cook until soft. Then add the tomatoes and mix well. Serve when these have softened a bit.
