Ikan Kuah Santan
fish stewed in a spicy creamy sauce

300 gr fish fillet
1/2 tsp salt
1 tsp lime juice
3 cloves of garlic
2 cm jahe/ginger
2 cm kunyit
1 cm lengkuas/laos/galangal
2 serai/sereh/lemon grass, white part
400 ml coconut milk (from 1/2 coconut)
2 red rawits
1 red lombok
1/2 tbsp fish sauce
1 spring onion
1 tbsp oil

Cara membuat:
Cut the fish into 6 slices and rub with the salt and lime juice and let it rest for 10 minutes. Cut the garlic into thin slices. Finely chop the jahe and grate the kunyit. Cut the serai into thin slices. Cut the rawits into pieces and the lombok into thin strips. Finely chop the spring onion.
Heat in a pan the oil and fry the garlic, the jahe and the kunyit for 1 minute. Then add the laos and the serai and fry for another 2 minutes.
Then add the coconut milk, the rawits and the lombok and bring it to the boil while stirring. Then add the fish and the fish sauce and cook for 5 minutes until the fish is done. Then mix in the spring onionr and serve.
