Ikan Kuah Kuning
Fried fish in yellow sauce from the Moluccas
Bahan-bahan:

500g swordfish / tuna
1 tsp salt
1 tsp asam/tamarind + 50 ml of water
oil
1 salam leaf
4 jeruk purut/kafir lime leaves
1 lemongrass
600 ml cocnut milk
1/2 tsp palm sugar
1 bunch kemangi (leaves)
Haluskan:
bumbu:
5 shallots
6 cloves garlic
4 red chilies
2 tsp ketumbar
1/2 tsp peppercorns
3 cm kunyit
1 tsp salt
2 cm laos
Cara membuat:
preparation:
Cut the fish into pieces and marinate it with salt and asemwater and let it rest for 10 minutes. Pound or grind the ingredients for the bumbu into a paste. Heat enough oil in a pan and fry the fish brown and cooked through and scoop from the pan.
Heat in a pan 3 tbsp oil and fry the paste with the salam, the jeruk purut and lemongrass for 4 minutes. Add the coconut milk and palm sugar and bring to a boil, while stirring.
Add the fish and simmer gently until everything is well mixed in and through. Spoon the kemangi in and serve.
