Ikan Paku
spicy fried fish

600 gr makarel
5 shallots
3 cloves garlic
3 red chilies
2 cm laos / galangel, crushed
1 lemongrass, crushed
1 salam leave
1 tbsp asem / tamarind
salt to taste
100 ml water
3 tbsp oil

Cara membuat:
Cut the makaral into large chunks. Heat in a wok the oil and fry the fish golden brown. Remove the fish. Slice the shallots and the garlic fine. Slice the chilies into small strips. Heat the oil again and fry the shallots, the garlic, the lemongrass, the laos and the chilies for 3 minutes. Add the salam, the asem, the salt, the water and the fish and fry it slowly until all liquids have evaporated. Serve.
