shrimp rolls from Medan

500 gr sticky rice
1 sereh / lemongrass
1 pandan leaf
175 ml coconut milk
1/2 tsp salt
banana leaves

bahan isi:
Ingredients filling:
250 gr shrimps, peeled
100 gr of grated coconut
100 ml of water
4 jeruk purut leaves
1 kunyit sheet

3 shallots
3 cloves of garlic
5 red lomboks
2 cm kunyit
3 cm jahe
5 cm laos
1 tbsp sereh

Cara Membuat:
Filling: Roast the coconut dry in a frying pan and pound of grind itt fine. Pound or grind the ingredients for the bumbu into a paste. Cut the jeruk purut and the Kunyit leaf finely. Mince the shrimps. Heat in a pan the water together with the bumbu and the grated coconut and bring to the boil and stir until the water is absorbed. Then add the jeruk purut, the kunyit leaf and the prawns and stir well. Let it cool down.

Steam the rice for 15 minutes. Heat the coconut milk together with salt, pandan leaf and sereh and cook slowly until there is 125 ml of liquid left. Mix this with the steamed rice and stir until the coconut milk is fully absorbed. Steam it again for 15 minutes.

Spoon 3-5 tablespoons of rice on a piece of banana leaf of 15cm and place 1 tablespoon of filling on top. Roll the banana leaf tightly with 2 cm diameter. Close the ends with biteng. Roast the packages slowly over a charcoal fire until the leaf becomes dark.

yields: 16-18 rolls
