Tumis Kerang Hijau
stewed mussels

300 gr kerang hijau / perna viridis, otherwise mussels
4 jeruk purut leaves
4 cloves of garlic
1/2 onion
2 cm jahe
3 cabe kering / dried chili peppers
250 ml of water
1/2 tbsp fish sauce
3 tsp saus sambal (see recipe)
1/2 tsp salt
1/2 tsp sugar
1 spring onion
2 sprigs of coriander
2 tbsp oil

Cara membuat:
Heat the water in a pan and cook the kerang together with the jeruk purut leaves until done and set aside. Finely chop the onion, the garlic, the jahe and the cabe kering. Cut the spring onion finely and the coriander coarsely.
Heat the oil in a pan and fry the onion, the garlic, the jahe and the cabe kering for 3 minutes. Then add the kerang and mix well. Then add the fish sauce, the saus sambal, the salt and the palm sugar and mix well. Pour in the water and cook until done. Then mix in the spring onion and coriander and serve.
