Abon Tongkol Pedas
dry-fried spicy tuna

1000 gr of tuna
1 tbsp lime juice
1 tsp salt
2 salam leaves
3 cm laos
2 sereh / lemongrass
5 jeruk purut leaves
300 ml coconut milk
2 tsp salt
1 tbsp palm sugar
1 tbsp asamwater
5 tbsp bawang goreng
3 tbsp oil

5 shallots
7 cloves of garlic
6 red lomboks
3 red rawits
1 tsp salt
1/2 tbsp ketumbar
4 kemiri/candlenuts

Cara Membuat:
Marinade the tuna with the lime juice for 20 minutes. Rinse off afterwards. Rub the tuna in with the salt and steam it for 25 minutes. Remove the bones and skin and shred/pluck the meat apart.
Pound or grind the ingredients for the bumbu into a paste. Heat in a pan the oil and fry the bumbu together with the salam, the laos, the sereh and the jerk purut for 4 minutes. Add the salt, the palm sugar and the coconut milk and cook it gently until the liquid has thickened. Then add the fish and stir until it is nearly dry. Then add the ash water and stir until it is completely dry. Mix in the bawang goreng and serve.
