Tongkol Tinoransak
Spicy stewed tuna from Manado
Bahan-bahan:
Ingredients:
400 gr of tuna
1/2 teaspoon of lemon juice
1/2 tea salt
4 sereh / lemongrass
2 pandan leaves
2 cm kunyit
3 cm jahe
1 teaspoon salt
8 jeruk purut
200 ml of water
3 tablespoons of oil

Bumbu:
7 shallots
10 green rawits
9 red lomboks
Cara Membuat:
preparation:
Cut the fish into pieces of 3x2x2 cm and marinate with salt and lemon juice for at least 20 minutes. Pound or grind the ingredients for the bumbu into a coarse paste. Roast the kunyit and pound or grind finely.
Heat in a pan the oil and fry the paste with lemon grass, the pandan, the kunyit and jahe for 4 minutes. Add the tuna and cook until it changes color. Add the salt and mix well. Then add the water and the jeruk purut and stir until the water is absorbed.
