Udang Jerbung Kalasan
Grilled/roasted fragrant prawns

500 gr udang jerbung / banana shrimp / prawns or tiger prawns
200 ml coconut water
1 tsp lemon juice
1 1/2 tsp salt
1 sereh / lemongrass
1 cm laos/galangal
2 salam leaves
1 tbsp palm sugar
100 ml coconut milk

4 shallots
1/6 tsp jinten
3 kemiri/candlenuts
1/2 tsp ketumbar
4 cloves of garlic

Cara Membuat:
Clean the shrimps and marinate them with lemon juice and 1/2 teaspoon salt. Pound or grind the ingredients for the bumbu into a paste. Grate the laos.
Heat in a pan the coconut water together with the bumbu, the laos, the sereh, the salam, the salt and the palm sugar and bring to the boil. Add the coconut milk and bring to a boil and remove from heat. Add the shrimps and allow for a minimum of 45 minutes to marinate.
Put the shrimps on skewers and grill/roast over a charcoal fire until brown and sprinkle them with the marinade while grilling/roasting.
