500gr sweet potato
5 tbsp flour
1 1/2 tbsp palm sugar
1 tsp salt
Peel the potato and cut it into pieces and place it in a pan of water. Boil the potatoes for 10 minutes until cooked. Drain the potatoes and mash it. Add the puree to the pan and cook gently, stirring constantly, for 5 minutes until the puree has become almost dry and let it cool.
Whisk the puree with the flour, the egg, the palm sugar and the salt until a smooth batter is formed. Shape with two spoons small croquettes. Heat in a wok / wadjan the oil and fry the croquettes until golden brown and serve with sambal or chili sauce
