Pallu Kaloa
Fried spicy beef


Bahan-bahan:
Ingredients:
100 gr beef
1/2 coconut
3 salam leaves
1 cinnamon stick
500 ml water
oil

Haluskan:
bumbu:
10 red shallots
1 tbsp ketumbar (coriander)
4 cloves garlic
1 tsp jinten (cumin)
5 cloves
2 sereh (lemongrass)
3 cm laos(galangal)
1 tbsp asem (tamarind)
1/4 nutmeg
3 keluwak
1 tbsp palmsugar
1/2 tsp salt

Bawang goring (fried shallots)

Cara membuat:
Preparation/method:
Slice the meat in pieces and grate the coconut. Fried the coconut dry in a skillet until golden brown. Mix the ketumbar, the jinten, the coconut and the pepper with the meat. Slice the shallots, the garlic and the sereh fine. Pound or grind the keluwak fine. Heat in a wok the oil and fry the shallots, the garlic, the laosand the sereh for 3 minutes. Add the meat and fry it brown. Then add all remaining ingredients and cook the meat slowly until done and the sauce has thickened. Sprinkle the bawang goring on top and serve.
