Dendeng Lambok
red fried seasoned beef

1000 gr of beef
700 ml of water
2 mace
2 salam leaves
2 jeruk purut leaves
1 serai / sereh / lemongrass
3 cloves garlic, chopped
1/2 tsp pepper
2 tsp salt

3 shallots
4 cloves of garlic
1/2 tsp pepper
2 tsp ketumbar
1 tbsp asam water
1/2 tsp salt
1 tsp palm sugar

Bumbu balado:
balado spices:
10 red lomboks
6 shallots
1 tomato
1 tbsp asam water
4 tbsp coconut oil
1/2 tsp salt
1/2 tsp palm sugar

Cara membuat:
Cut the meat into slices. Heat in a pan the water together with the meat, the mace, the salam, the jeruk purut, the serai, the garlic, the salt and the pepper and cook the meat until tender. Remove the meat from the pan and strain the stock.

Pound or grind the ingredients for the bumbu into a paste. Heat the stock and add the bumbu and meat and bring to the boil and cook for 2 minutes. Turn off the heat and leave it to rest for at least 3 hours. Then remove the meat from the pan and let it drain. Heat oil in a pan and fry the meat dark brown / black but do not burn it.

Steam the lomboks, the shallots and the tomato until they are soft and then pound or grind it into a paste. Heat the coconut oil in a pan and fry the paste for 4 minutes. Then mix in the salt, the palmsugar and the asam water. Then mix in the meat and serve.
