Bakso Sapi Sauce Padang
meatballs with a spicy sauce from Padang

Bahan Bakso:
ingredients balls:
450 mince meat (bovine)
100 g tapioca starch
100 gr ice cubes
5 cloves of garlic
2 tsp salt
1 tsp pepper
1 tsp palm sugar
water

Bahan saus Padang:
ingredients sauce:
4 shallots
5 dried peppers/chilies
2 red lomboks
5 red rawits
4 cloves of garlic
3 cm jahe
200 ml cooking water from the balls
2 tbsp of oyster sauce
4 tbsp of saus tomat (see recipe)
2 tbsp saus sambal (see recipe)
1/2 tsp salt
1/4 tsp pepper
1/2 tsp palm sugar
2 tsp maizena/corn starch dissolved in 4 tbsp water
2 tbsp oil

1-2 spring onions, finely sliced

Cara Membuat:
preparation:
Cut the garlic finely and crush the ice cubes. Mix the meat with the tapioca. the ice cubes, the garlic, the salt, the pepper and the palm sugar. Form from the mass the balls and use 1 tbsp of the mixture for each ball. Heat in a pan of water and add the balls. When they float they are cooked. Scoop them out of the pan and set aside.
Deseed the peppers and cut the shallots, garlic and peppers finely. Heat in a pan the oil and fry the shallots, garlic, peppers and jahe for 4 minutes. Add the cooking water, the oyster sauce, the saus tomat, the saus sambal, the pepper, the salt and the palm sugar and mix well. Bring it to the boil. Then add the maizena solution and stir until the sauce thickens. Then add the balls and mix well. Sprinkle the spring onions on top and serve.
