Sambal Goreng Cirebon
spicy beef with peteh beans

300g beef
8 peteh beans
2 salam leaves
2 stalks lemongrass
1/2 tsp salt
1/2 tsp palm sugar
200ml coconut milk
1/2 tsp asemwater
2 tablespoons oil
5 shallots
3 cloves garlic
4 red chilies
2 cm laos
1 teaspoon shrimp paste

Cara membuat:
Cut the meat into small cubes and halve the peteh beans. Pound or grind the ingredients for the bumbu fine into a paste. Combine the chilies with salt and let it rest for 10 minutes. Rinse it and then pat dry. Heat in a pan the oil and fry the chilies crispy and then slice into strips.
Heat in a pan the oil and fry the paste with the salam and lemongrass for 4 minutes. Add the meat and fry until brown. Add the peteh and mix well. Add the coconut milk, salt and palm sugar and cook until tender. Spoon in the asemwater and fried chilies/lomboks and sprinkle bawang goreng on top and serve.
