spicy fried beef tripe from Semarang

Bahan-bahan:

500g beef tripe, washed
1200 ml of water
2 salam leaf
2 cm laos
2cm jahe
 
Bahan Tumisan:
stir-fry ingredients:
4 shallots
2 salam leaves
2 stalks lemongrass
4 tbsp kecap manis
1/2 tsp palm sugar
1/2 tsp salt
4 tablespoons oil
 
Haluskan:
bumbu:
7 shallots
6 cloves garlic
3 red chilies
5 red rawits
4 kemiri nuts
2cm kunyit
 
Cara membuat:
preparation:
Heat in a pan the water together with the tripe, the salam, the laos and the jahe and boil the meat is cooked and tender. Drain and leave 300 ml broth behind. Cut the tripe into pieces.
Pound or grind the ingredients for the bumbu fine into a paste. Cut the shallots for the stir-fry thinly.
Heat in a pan the oil and fry the paste, shallots, the salam, the lemongrass for 5 minutes. Add the tripe and mix, then add the kecap salt and palm sugar and mix well. Slowly add the broth and cook until the liquid has evaporated.
