Kroket Pekalongan
filled potato croquettes

500 g potato
25 g milk powder
2 eggs
1/2 tsp salt
1/2 tsp pepper

200 g ground beef
50 g carrot
2 shallots
2 cloves garlic
1 tsp pepper
1/2 tsp salt
1 tbsp flour
1 tbsp butter

Preparation:
Peel the potato and cut it into pieces. Heat the oil in a pan and fry the potato until golden brown. Drain it afterwards and mash it. Then mix it with the milk powder, the salt, the pepper, and 1 egg, stir until a homogeneous mixture is formed, and set aside.
Peel the carrot and cut it into small cubes. Finely chop the shallots and the garlic. Heat the butter in a pan and sauté the shallots and garlic for 2 minutes. Then add the carrot, minced meat, salt, pepper, and some water, and cook while stirring until done. Next, add the flour and some water and stir until it becomes a thick mixture, then set aside.
Divide the potato dough into portions. Roll out each portion of potato dough, spoon some of the minced meat mixture onto it, and smooth it out. Then roll the dough up into the shape of a croquette.
Beat 1 egg. Roll the croquettes through the breadcrumbs, the beaten egg, and then through the breadcrumbs again. Heat oil in a pan and fry the croquettes until golden brown. Let them drain and serve.
