Cincang Nias
slowly cooked fried pork

1000 gr pork
1250 ml water
3 shallots
2 cloves garlic
3 cm jahe (ginger)
3 cm laos (galangal)
1/2 tsp pepper
1 lime (juice)
2 tbsp kecap manis (dark sweet soy sauce)
1 tsp kecap asin (light soy sauce)
2 tbsp oil

Cara membuat:
Cut the meat into cubes and the shallots, the garlic, the jahe and the laos into thin slices. Heat in a wok the water and add the meat. Let it cook slowly for 30 minutes. Remove the meat and retain 750 ml fluid. Heat in a wok the oil and fry the shallots, the garlic, the jahe, the laos, the pepper and the salt for 3 minutes. Add the limejuice, the meat, the kecaps and the fluid and let it simmer slowly and covered for 30 minutes.
